Chickpea and avocado salad

I LOVE using this one when I have an avocado that's about to turn and its such a quick and easy recipe that sorts my lunch for 4 days!

Makes 4 servings

Ingredients:

1 overripe Avocado

2 tablespoons Tahini ( a sesame sauce but you can subthis for any of you're favourite salad dressings)

1 can chickpeas

1 cucumber

10 cherry tomatoes

2 carrots

1 tablespoon dried dill

4 English muffins (ASDAs are vegan friendly)

Recipes:

Mash the avocado with the dressing or sauce and then stir in drained can of chickpeas

Cut up veg in to chunks and stir in to chicoea and avocado mix. Stir in Dill.

Toast muffins and serve salad on top of muffins.

Warm, gooey, fresh and crunchy all at the same time <3
