Stale bread and wilting spinach = THE PERFECT cheese toastie. Aside from reducing food waste, you can also enjoy the nutritional benefits of an iron bump from the spinach and the Manganese, vitamin B6 and vitamin C in the garlic. Plus it’s friggin delicious!!
4 slices of bread (if it’s stale it just adds to the crunch)
80g whatever cheese you like (for vegan options I like the Tesco vegan cheddar)
However much spinach you have lying around
Margarine (I use Vitalite)
Simply add spinach (I use about 4 handfuls but you can adjust and use however much you have) to a frying pan with a tbsp of water and 2 cloves of garlic. Keep stirring until the spinach wilts down half it’s original size.
Put spinach in a bowl and dry the frying pan.
Butter (or margarine) both sides of 4 pieces of bread, spread the spinach on 2 slices of bread, top with sliced cheese of your choice and top with other 2 slices. Stick in a frying pan on medium heat for about 3 mins on either side or until both sides are brown and crunchy and cheese is oozing out.
