Halloween Pumpkin Soup

Warming and delicious pumpkin soup is exactly what you need come this time of year and there could not be a simpler way to use the insides of your jack'o'lanterns than this. Lightly spiced, perfect served with fresh crusty bread AND ready in 15 minutes - what more could you ask for?!

All you need is:
1tbsp vegetable oil
2 onions
3 cloves garlic
2tsp cumin
2tsp coriander
1/2 tbsp mixed spice
1 heaped tbsp butter or vitalite
500ml vegetable stock
1kg pumpkin flesh (this sounds like a lot but you'll get that out of 2 pumpkins easily)

Directions:
1. Chop and fry the onions and garlic in oil until browned.
2. Add spices and stir for 1 minute.
3. Add butter, stock and pumpkin. Simmer for 10 minutes or until pumpkin it soft.
4. Blend. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Done!! Takes 15 mins total and is totally delicous!
